When we talk about The One Restaurant, confusion can possibly arise from simply considering it as a Hong Kong restaurant. However, the concept of The One is to be a Hong Kong restaurant with creative, cultural and gastronomic fusion cuisine based on modern Hong Kong cuisine.
Hong Kong restaurant with creative fusion cuisine
Madrid is a great cosmopolitan city with very varied and important gastronomic proposals. Thanks to the raw materials present in the Mediterranean basin and in the Atlantic Sea, you can enjoy good meals.
However, Asian cuisine is also of a high standard. More specifically, in the case of Hong Kong cuisine, in addition to having a high level, it is also very minimalist.
For this reason, the concept of The One Restaurant from the beginning has been to mix the Mediterranean and Asian cultures.
The seed of a great project
All this approach originates from the experiences generated in the Balearic Islands, when the owners started their hotel project in Mallorca.
Upon arriving there, they were attracted by the variety inherent in Mallorcan cuisine, with traditional shellfish dishes such as cuttlefish pica-pica, the tongue, the Mallorcan fried … as in the gastronomic culture of the city of Hong Kong the shell seafood is consumed a lot.
Hong Kong cuisine is based in part on Chinese medicine. There, the shell seafood is important because it offers many vitamins and minerals that the body needs. When fused with our technique, it is cooked in a lighter way and does not carry the special taste that it normally presents.
Working with the liqueurs of rice, ginger and Chinese chives, the casquería becomes exquisite elaborations.
In fact, a wide variety of Mallorcan dishes are prepared with herbs and in the pan, being quite similar to Asian cuisine. From that moment our dishes began to be developed, which combine different cultures. That was the root of our merger for years.
Creative fusion cuisine at The One
Hong Kong’s culture is so diverse that it educates us to absorb many new things from childhood. For this reason, we have always been very open when it comes to learning other types of cuisine, such as the Mediterranean.
Due to that circumstance, The One has become a restaurant in which there are no limitations to combine eastern and western cultures.
For example, cuttlefish pica-pica (originating from Mallorcan cuisine) we have made it a popular dish prepared with oriental techniques. On the other hand, we have combined red free-range chicken with the typical Hong Kong street food chicken with Indonesian satay sauce.
In the wok stir-fried rice, we follow the Hong Kong tradition, but combined with the truffles of western origin. We make steamed sea bass with fried skin because Westerners have a habit of only taking crispy skin.
All these variations and combinations contribute to The One becoming a Unique restaurant for the way of thinking and creating the dishes.
